OOO this is a great low carb recipe: My in-laws came for a visit and cooked this for us. YUM!

In a 9X13 pan, layer cauliflower, Chorizo, olives, top layer with cheese. Variations of cheeses is always welcome!!!! Smash a little Cream over the top as well and bake away!
Serve with all sorts of taco type fixings, salsa verde, salsa, sour cream, you name it. Just has to be low carb to say low carb.
